Romans, Jews, Phoenicians, Arabs... the list of influences on Mallorca's cuisine is as long as that of the peoples who have passed through this region. The island's gastronomy, essentially Mediterranean and with access to products of the sea and the land that are the envy of other latitudes, is worth a trip in itself. Every season of the year has its specialities, adapted to the resources traditionally available at any given time.
