Inturotel recipes: coca de Trampó

Mallorca is an island full of flavor and delicious recipes with the Mediterranean diet in their DNA. We want to share with you one of our favorite recipes for the summer months: "coca de trampó". "Coca" we could translate it as tart (in this case salty) and the "trampó" is a salad from the garden that has ripe tomatoes, green pepper and white onion (from the sweet, which does not itch). Many Majorcans have their own garden and turn to it for the preparation of their favorite dishes, a genuinely local cuisine and Km 0.


The result may remind you of pizza, but without mozzarella. Surely the origins of Italian pizza and Mallorcan cocas are common. Centuries of cultural-gastronomic exchange in the Mediterranean have led to the creation of recipes of incalculable value.

Here we show you how to make your own "coca de trampó" so that you can enjoy it in good company and accompanied by a good Mallorcan red wine.

Coca de trampó for 4 people


INGREDIENTS


3 or 4 ripe tomatoes
2 green peppers
1 white onion
Salt, pepper, sweet paprika and olive oil


For the mass:
1/4 glass olive oil
1/2 glass warm water
1 piece of baker's yeast
1 tablespoon of butter
Flour that you need


CAUGHT RED HANDED:


Preheat the oven to 200 degrees.
Prepare the "trampó", cutting the tomato and the green pepper into squares and the chopped onion, mix everything in a salt and pepper bowl, add sweet paprika and oil. Leave a little time to rest for marinade.
Meanwhile we mix the oil, water, butter, yeast and flour and knead well.
Add flour until it begins to peel off the edges. The dough should be soft and slightly sticky, not too hard.
Spread the dough with your fingers on a baking tray, previously moistened with oil.
